The making of this salt combines Bali’s centuries old salt-making tradition with the use of solar houses to control the evaporation process. The salt crystals that are formed in the surface of the drying tables are scraped by hand and strained dry to further reduce the remaining moisture content. Fleur de Sel is the first layer of salt crystals harvested from the drying tables. This salt has intense saltiness with some sweet notes.
